Easy Carrot Slaw

The natural sweetness of carrot shines through in this classic French carrot salad.
Ingredients:
• 5 carrots, peeled and shredded on a grater or in a food processor
• Juice of 1 lemon
• 2 green onions, thinly sliced
• Handful of parsley, finely chopped
• 1 tablespoon olive oil
• Salt and pepper to taste
Directions:
Mix all ingredients, taste for seasoning, and refrigerate.
Tip:
• This salad is a nice bright side dish for lunch or dinner, and keeps well for a few days in the fridge.
• This recipe is so simple, that little children love to help make it, and help eat it!
