Lamb Kofta

Lamb is a red meat that is full of minerals, and lambs are raised without the hormones, antibiotics and chemicals that we often find in other meat. This Middle Eastern flavoured lamb dish comes together quickly and can be doubled or tripled for a crowd.


Ingredients:

• 500 grams ground lamb

• 1 teaspoon cumin

• 2 teaspoon coriander

• 2 cloves garlic, minced

• 1 tablespoon chopped mint

• 1 tablespoon chopped parsley

• Salt and pepper to taste


Directions:

1. Mix all ingredients well and form into generous sized meatballs.

2. Lightly flatten the balls so they have an oval shape.

3. Grill the koftas for 4 minutes on each side, or place in a hot pan and sear for the same amount of time.

4. Finish with a squeeze of lemon.


Tip • These are wonderful served with Greek salad, white bean hummus, and cauliflower “rice”.
